Elevate your tasting experience with these suggested pairings:

Bean to bar:

Peru / Indonesia 72%- These bars were made with the same equation. 72% cacao (cocoa and cocoa butter, both), and 28% allulose. Allulose is a natural sugar, about 70% as sweet as white table sugar, derived from figs and rasins with little glycemic impact. These are great as a side by side comparision of origin terrior.

Pair with: mozzerella cheese, raisins. 

Craft Confections:

Salted Caramels, Tart Cherry Caramels (made with tart cherry puree, Double T Acres | Lakeshore, MN). Pair the caramels with a hot coffee. We like to cut these in half. 

Bean to Bar Ganache Truffle - Peruvian "white" cacao, heavy cream, butter, in a 72% couverture shell (contains sunflower lecithin). *These have the shortest shelf life of your collection. 

With a hot knife blade, cut these fresh truffles in half and just, savor. Pair with a deep breath!

Apple Crisp Bon Bon - Oat butter ganache (granola/ oat butter, 64% semi-sweet couverture), zestar apple chips, cinnamon. Pair with: salted almonds, candied pecans, roasted pear slices.  Best before 12/1/25 (see ingredients below)

Strawberry Rhubarb Vanilla Jam - This year we began using Pamona's Pectin. Our jams are really "spreads" and incredibly low sugar. Pair this with something spicy, a pepperjack cheese and almond cracker, or a whipped cream cheese. Rhubarb from our gardens. This summer we planted over 40 rhubarb root splits and seedlings between the kitchen and the home garden. Rhubarb is unique to our region in that it requires a hard freeze. It is not native to Minnesota!

Traditional Couverture Bars:

Petal & Pollen Lemon White Chocolate Bar - Adorn platters as a charcuterie accent, this would be best with light flavors / fresh strawberries.

Xoco Mocha -  Inspired by traditional cacao drinks (maybe a purist sipping cocoa upcoming?). Smooth coffee infusion, is great as a chopped chocolate melted into a beverage.

Vanilla Infusion Kit:

Infuse and steep as directed or remove bean and seeds and pulse in a sugar for a vanilla infused baking stash of Vanilla Sugar. Recently, we added powdered vanilla bean to unsweetened apple sauce. The results were phenomenal!
